  • For anyone curious, the eggs at the end are fresh. I have a farm next to me I get eggs from all the time. They are that orange inside, but not in NY like babish thankfully a bit cheaper. The average egg you buy at the grocery store can be 2 weeks or more old by the time you get it.

  • The deep orange you see in the eggs usually indicates a wider diet in the chicken. It doesn't technically correlate to the quality or healthiness of the eggs, but paler yolks are an indication of simple carbs like wheat and barley, whereas yellow maize contains more carotenoids that will result in a darker yolk. Different countries have different preferences for yolk colour, here in New Zealand the average is something like 13-14 'orangeness' on a scale of 1-15.
